This is the recipe you make when you want something that actually tastes like you tried, but you did not try very hard at all. Everything gets mixed in one bowl, it works hot or cold, and the whole thing rides on two sauces doing all the heavy lifting.
Why This Works
Mentsuyu brings the savory-sweet dashi backbone. Sesame shabu shabu sauce brings the nutty richness. Ginger wakes both of them up. That's it — that's the sauce. No sourcing a pantry's worth of ingredients, no cooking anything down. Just stir and go.
Ingredients
- 1 package KYUNU Just Noodles
- 1 tsp minced ginger (from a tube is fine)
- 4 tbsp mentsuyu
- 4 tbsp sesame shabu shabu sauce
- 3-4 tbsp water
- Sesame seeds and cucumber, for garnish
- Chili oil, optional
Instructions
- Cook the KYUNU Just Noodles according to the package directions.
- For cold noodles: shock them in an ice bath right after cooking, then drain well. For hot noodles: skip the ice bath and drain straight into the bowl.
- In a bowl, stir together the mentsuyu, sesame shabu shabu sauce, and minced ginger.
- Add the noodles and toss until every strand is coated.
- Top with sesame seeds, sliced cucumber, and a drizzle of chili oil if you're using it.
Notes
- Serve it cold on a hot day, or hot when you want something more like a bowl of noodle soup's saucier cousin. Same recipe, two completely different moods.
- Tube ginger is genuinely fine here — no one is grading you on knife skills for a five-minute bowl of noodles.
