About this Recipe:
When you're craving Korean noodles, but don't want to wait for delivery, this noodle dish comes together in less than 5 minutes with things you definitely already have in your pantry!
The sauce is very reminiscent of Bibim naengmyeon or Bibim guksu. It's tangy, spicy, and just a tad sweet. The cold bouncy noodles paired with the umami enhancing ingredients are super refreshing on a hot summer day, especially when you don't feel like eating much.
You might think pasta sauce cold is gross, but the pasta sauce really doesn't stand out a lot. The jarred marinara sauce we used added some sweetness and acidity, but not an overpowering tomato flavor. It blends in with the seaweed and sesame oil to just read as a bright umami flavor.
Pair it with eggs to make it even more satisfying and to hit your protein goal!
