Recipe Ingredients & Steps

This recipe makes enough for 2 modest noodle bowls. Divide ingredients in half and mix in each bowl, or mix it all together and then divide.

 

Sauce Ingredients:

  • 8 tbsp Chojang
  • 4 tbps Marinara Sauce
  • 2 tsp sesame oil

 

Noodles & Toppings:

  • 1 Package KYUNU Just Noodles
  • 2 tbsp Sesame Seeds
  • 2 tbsp furikake seasoning
  • Crumbled nori to taste

 

Instructions:

  1. Make the chojang if you can't find store bought. Chojang recipe in the recipe notes.
  2. Boil KYUNU noodles for 3.5-4 minutes, then drain.
  3. Rinse noodles under cold water to stop the cooking and drain.
  4. Assemble the bowls: Add the noodles to each bowl, and then add the spoons of each sauce and toppings. Crumble more nori over each bowl just before serving.
  5. Mix well and enjoy immediately!

 

Recipe Notes:

  • Chojang Hack: 4 spoons gochujang, 2 spoon rice wine vinegar, 4 tsp hot honey, 2 tsp monkfruit sweetener.

The sauce is very reminiscent of Bibim naengmyeon or Bibim guksu. It's tangy, spicy, and just a tad sweet. The cold bouncy noodles paired with the umami enhancing ingredients are super refreshing on a hot summer day, especially when you don't feel like eating much.

You might think pasta sauce cold is gross, but the pasta sauce really doesn't stand out a lot. The jarred marinara sauce we used added some sweetness and acidity, but not an overpowering tomato flavor. It blends in with the seaweed and sesame oil to just read as a bright umami flavor. 

Pair it with eggs to make it even more satisfying and to hit your protein goal!
