What is Chuka Soba?

Chuka Soba is the original ramen noodle — and the most misunderstood one. Made with alkaline water and enriched with egg, it's what gives ramen its signature springy bite, golden color, and that satisfying chew that holds up in hot broth without going mushy. The name literally means "Chinese-style noodle" in Japanese, a nod to its origins before ramen became ramen. Most noodles you find today are fresh, machine-pressed, and dead within days. Ours are air-dried the traditional way — shelf-stable, chef-grade, and built to cook perfectly every single time.

Is KYUNU Chuba Soba the same as protein ramen?

Technically, yes KYUNU Chuka Soba noodles are protein ramen — but that's the least interesting thing about it.

KYUNU Chuka Soba noodles contain 30g of plant & egg protein with all nine essential amino acids, plus 15g of fiber with resistant starch that slows carb absorption. So if you're searching for protein ramen, you've found it.

But here's the thing: KYUNU was built as a great noodle first.

Our recipe is rooted in pre-industrial ramen — the version that actually included egg before mass production stripped it out. The result is an artisan noodle that belongs in a serious bowl of broth, a cold sesame noodle dish, or a stir fry. It doesn't taste like a protein supplement. It tastes like a noodle worth eating.

The nutrition is real. The protein hits. But it's a consequence of getting the noodle right — not the other way around.

Which flavor should I try first?

Which flavors are spicy?

Thai Shrimp Tom Yum is spicy. Chicken & Black Garlic is mild. Taiwanese Pork & Shrimp Danzai has no heat at all — it's a rich, savory seafood broth. Just the Noods is plain with no seasoning included.

What is Danzai?

Danzai is a dish from Tainan, Taiwan's food capital, dating back to the late 19th century. A fisherman named Hong Yutou began selling noodles from shoulder poles during typhoon season when he couldn't go out to fish — which is why it's also called "Slack Season Noodles." His descendants eventually opened Du Hsiao Yueh, a restaurant that has been serving the dish since 1895. Our version captures that same pork and seafood broth tradition.

What is Just the Noods?

Plain Chuka Soba noodles with no seasoning packet — chef's choice. Use them in any broth, cold noodle dish, or stir fry. If you already have a sauce or broth you love, this is your noodle.
