Sometimes, you just need a warm, nourishing bowl of soup—fast. This Chicken, Salt, and Sesame Oil Broth is rich, cozy, and naturally thickened by Kyūnu noodles, which release their starches as they cook. A touch of white pepper adds warmth, while delicate egg ribbons make it extra satisfying.

For an even deeper flavor, we’re adding a chicken or vegetable bouillon cube, making this soup extra savory without extra effort. Best of all? It’s a one-serving recipe that comes together in minutes—just double it if you're sharing!

Note: We use the KYUNU 3.0 noodles here, so they appear more off white than yellow. 


Ingredients (Serves 1)

  • 1 cup chicken broth (homemade or high-quality store-bought)
  • 1 serving Kyūnu noodles (about 50-60g)
  • ½ chicken or vegetable bouillon cube (or use a full cube for a stronger flavor)
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon white pepper (or to taste)
  • ½ teaspoon toasted sesame oil
  • 1 large egg, beaten
  • Chopped scallions (optional, for garnish)
  • Cilantro (optional, for garnish)
  • 1/8 cup Wood ear mushrooms, rehydrated and blanched (optional)
  • 1/4 cup Zucchinni, sliced and blanched (optional)

Instructions

Step 1: Simmer the Broth & Cook the Noodles

  1. In a small pot, bring the chicken broth to a gentle simmer over medium heat.
  2. Add the bouillon cube and stir until fully dissolved.
  3. Add the Kyūnu noodles and cook until they reach your preferred texture, about 2-3 minutes. The broth will naturally thicken as the noodles release starch.

Step 2: Season the Soup

  1. Stir in the salt, white pepper, and sesame oil to deepen the flavor.

Step 3: Create the Egg Ribbons

  1. Lower the heat to a gentle simmer. Slowly drizzle the beaten egg into the soup while stirring in a circular motion to create delicate egg ribbons.

Step 4: Serve & Enjoy

  1. Taste and adjust seasoning if needed. If you like a stronger sesame flavor, add an extra drop of sesame oil before serving.
  2. Garnish with chopped scallions, if using, and enjoy hot!
