Real ramen starts with the noodles

In the U.S., ramen usually means one of two things:

• The instant brick
• Or the twelve-hour restaurant bowl

But there's a third kind of ramen noodle most Americans rarely encounter.

They're uncooked ramen noodles — the kind you boil in a pot of water, just like pasta. In Japan and Taiwan, they're everyday pantry staples. In the U.S., they're usually only found in specialty Asian markets. So we started making them in America — because you shouldn't have to hunt for a great noodle.

Ours are made in the Chuka Soba tradition — the alkaline, egg-enriched wheat noodle style that modern ramen was built on. Chef-crafted and made in America — sheeted, cut, and air-dried the traditional way. Never extruded. Never fried like instant noodles.

For our first Seasonal Trio, we started with our three most beloved flavors. Each one pairs beautifully with spring vegetables, bright pickled mustard greens, and the kind of fiery heat that — as any Asian household knows — is the best way to fight the summer heat.

Thai Shrimp Tom Yum — Bright, aromatic, and boldly savory. The fire-and-tang that defines Thai cooking — built from real kaffir lime leaves and a broth that doesn't hold back.

DIY Chili Oil / Chili Crunch Mix it yourself. Finish every bowl your way. Also excellent on eggs, rice, dumplings — anything that deserves some heat.

Pro tip: 

• Add a spoonful of the chili oil to the Tomato Beef for the classic numbing spice
• Add a spoonful of the chili oil to your Tom Yum to mimic the smoky depth of fried shrimp paste
