Slack Season Noodle Base

Traditionally served as a snack in Tainan, Taiwan, these noodles originated during the Tomb Sweeping festival when the island experienced frequent typhoons which resulted in less fish being caught. During this time a fisherman would walk around town selling noodles from a pole he carried on his shoulder, and so this dish also goes by another name: Ta-a-mi. 

With a blend of pork bone broth, taiwanese braised pork, shrimp stock, black vinegar, and garlic, this bowl of noodles packs a punch! Pair with some crunchy and flavorful vegetables and it becomes a well balanced meal.
