Chicken Shio Soup Base

Shio ramen is an under-appreciated classic Japanese ramen style that often gets overshadowed by its famous fatty, creamy brother, the Tonkotsu ramen. But we ditch all that fat for a lighter, healthier broth that is still collagen-rich. 

We pressure cook chicken bones with anti-inflammatory herbs like ginger and garlic to extract all the nutrients and build depth of flavor. Then we double strain the liquid gold for a clear, clean tasting broth.

We prepare our bone broth with high quality salt but with less  sodium than the traditional Japanese tare, so that those who are watching their sodium intake can enjoy this delicious meal too. Feel free to add salt or soy sauce to taste.
